Learning outcomes of the curricular unit:
The Assessment of Food Intake Unit aims to acquaint students with the methods of collection of food intake information.
Skills to be acquired:
- To understand and correctly use specific concepts of food intake evaluation.
- To be familiar with the data collection methods for food intake and to adapt them to specific situations.
- To be able to collect, record and report data on individual food intake.
Syllabus:
Lectures:
- Introduction – essential concepts. Factors that influence the food intake and the data collection. Criteria to choose an assessment method.
- Methods of food intake assessment – features, application, strengths and weaknesses: 24h dietary recall, food diary, food frequency questionnaires.
- Food intake quantification – portions, validation of home measures, food models.
- Methods of food intake assessment in special conditions (disable, illiterate, etc.).
- Application of food intake assessment methods in population studies.
